Greek Chicken
Great quick marinade for chicken that is either baked or BBQed-- from an American Test Kitchen Magazine
Ingredients
- 1/2 cup olive oil
- 2 tbsp fresh rosemary (less if dried)
- 2 tbsp fresh thyme (less if dried)
- 5 cloves of garlic
- Zest + juice of 1 lemon
- 1 tbsp salt
- 1 1/2 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1/2 tsp pepper
- 3 lbs chicken pieces (works great to pull skin from the pieces)
Preparation
- Prepare the marinade by blitzing everything but the chicken with an immersion blender.
- Pour over chicken in a freezer bag and marinade for between 30 minutes and 2 hours.
- Bake at 425 until chicken registers 175 (30-35 minutes), or BBQ as one usually does chicken.
